How To Make Garam Masala/Punjabi Garam Masala Recipe

Garam masala is a very strong,fragrant and unique blend of Indian spices that is widely used in Indian cooking.The composition of the spices varies according to the region and the personal taste of the people of that area.There are many recipes for making garam masala here.

I am making a typical north Indian version of garam masala which contains coriander seeds,cumin seeds,peppercorns,cloves,cinnamon,nutmeg,mace,green and black cardmom pods and bay leaves.

Few of the ingredients are first lightly toasted and then mixed with the others to make a fine powder.

This masala has absolutely wonderful aroma which no store bought masala can match,only a few pinches are sufficient to spice up all your north Indian curries and dals.

Makes: 1/2 cup


  • 4 tbsp coriander seeds.
  • 2 tbsp cumin seeds.
  • 1 tbsp green cardmon pods.
  • 4-5 black cardmom pods.
  • ΒΌ piece of nutmeg.
  • 3 blades mace.
  • 6 sticks (1 inch each) cinnamon.
  • 1 tbsp black pepper corns.
  • 1 tbsp cloves.

3 bay leaves.


  • Mix together coriander and cumin seeds in a plate and keep aside.
  • Mix all the other masalas in a bowl,break cinnamon sticks into smaller pieces for easy grinding,keep aside.
  • Dry roast corriander and cumin seeds in a pan for a minute,cool them and mix with all the other ingredients and grind into a fine powder ,seive if necessary.
  • Your garam masala is now ready to use.
  • Stays fresh for few months.
