Lauki Kofta Curry/Lauki Ke Kofte Recipe/How To Make Lauki Kofta Recipe

Lauki ke kofte is a very popular vegetarian main course dish loved by most vegetarians. It is cooked in almost all households across North India.Though there are many variations to the recipe my recipe yields the most soft,succulent and melt in mouth kofte.

Lauki ke kofte are very delicious and easy to make and tastes great with boiled rice, roti or any other Indian flat bread.

Follow this stepwise recipe with pictures to make this delicious recipe at home for your family and friends.

Serves: 3 to 4

Cooking time:25 to 30 mins

Ingredients for Kofte:

  • 2 ½ cup grated bottle gourd or lauki.
  • 2 tbsp grated paneer or cottage cheese.
  • 4 tbsp besan or chickpea flour.
  • ¼ tsp turmeric powder.
  • ½ tsp salt.
  • ¼ tsp garam masala powder.
  • ¼ tsp dry corriander powder.
  • 1 green chilli chopped.
  • ½ tsp ginger chopped.
  • ¼ tsp red chilli powder.
  • 1 tbsp chopped green coriander leaves.
  • 1 tsp oil.
  • Oil to fry.

Ingredients for gravy:

  • 1 medium size onion chopped fine.
  • ½ tsp cumin seeds.
  • 2 ½ medium size tomato.
  • 1 green chilli.
  • ½ inch chopped ginger.
  • 3 to 4 garlic cloves.
  • 2 tbsp yoghurt or dahi.
  • ¼ tsp turmeric powder.
  • 1 tsp coriander powder.
  • ½ tsp cumin powder.
  • ½ tsp red chilli powder.
  • ½ tsp salt.
  • 1 pinch sugar to balance the sourness of the tomatoes.
  • ¼ tsp garam masala powder.
  • 2 ½ tbsp vegetable oil.
  • 2 tbsp fresh cream or malai.
  • 2 tbsp chopped coriander leaves.


  • Heat a heavy bottomed pan or kadhai on medium heat,put 1 tsp oil and add grated lauki in it stir and saute,add a pinch of salt,cover and cook for 2 to 3 mins keeping the heat low.Remove the lid and dry out as much moisture as you can from grated lauki keep stirring on medium heat till lauki is completely dry. Remove onto a plate and let the mixture cool down completely.
  • Now add grated paneer,chickpea flour,salt,,turmeric powder,garam masala powder,red chilli powder,coriander powder,chopped ginger,chopped green coriander leaves,chopped green chillies and mix well. The mixture will be like a sticky dough.
  • Grease your hands with little vegetable oil and make lemon size balls with the dough and keep aside.
  • Heat sufficient oil in a kadhai or a heavy bottom pan to smoking point,lower the heat to medium and fry the balls few at a time till golden brown.
  • Take care not to turn the balls too much while frying as they are very delicate and may break.Turn sides gently with a spoon, do it only when one side is golden brown.Fry all the balls and keep aside.
  • Before preparing the gravy we will make a masala paste.
  • In a grinder add the chopped tomatoes,chopped green chillies,ginger,garlic cloves,yoghurt,turmeric powder,coriander powder,cumin powder,red chilli powder,sugar and salt grind the mixture to a fine paste and keep aside.
  • Heat oil in a pan or kadhai to smoking point,lower the heat to medium and add cumin seeds,when they start spluttering and changing colour add chopped onions and fry till golden brown,add the masala paste.
  • Lower the heat to minimum and fry the masala keep stirring now and then cook patiently till all the liquid has dried up and the oil starts oozing out from the masala.
  • Add 2 ½ cups of water and let it boil for 2 to 3 mins.
  • Add the koftas,stir and check the seasoning,add more salt if needed,add the garam masala powder,chopped coriander leaves and cream,switch off the gas donot cook any further.
  • Delicious lauki kofta curry is ready !!
  • Serve hot with boiled rice or any Indian flat bread.


  • Add the koftas to the curry only when you want to serve the dish. You can make the gravy and prepare the koftas beforehand and keep them separately. Heat the gravy and mix the koftas just before serving to prevent them from breaking and also soaking up too much gravy.
